Natural (dry). The cherries are dried in the sun with all their pulp, so the beans absorb sweet, fruity, full-bodied flavours (dark fruit, chocolate).
Brazil – the world's largest coffee grower, a position it has held unchallenged for more than 150 years. Brazilian coffee is known for its balanced flavour, very gentle acidity and natural sweetness. Natural processing traditionally dominates in Brazil: the cherries are simply dried in the sun together with the pulp.
